Podcast Lesson
"Blame food industry, not dietary fat guidelines A common argument holds that the 1980s low-fat dietary guidelines caused the obesity epidemic — but that misreads history. Hill explains that 'the recommendation at the time to eat less saturated fat, there's nothing wrong with that recommendation,' and that what actually went wrong was the food industry's response: 'they quickly jumped and said, okay, there's an eat less fat message, let's print that on the front of all of our foods and create these hyper-palatable, very energy-dense, delicious foods that are low fat and are convenient and are cheap and highly processed.' People reduced saturated fat but replaced it with ultra-processed, refined-carbohydrate products — which is what drove the health decline. Understanding this distinction prevents repeating the same mistake: any future guideline to 'eat less X' must also specify what healthier whole-food replacement to eat instead.
